Grown by Bayardo Reyes at Finca San Jose de las Nubes, this coffee comes from heritage seeds saved from his grandfather’s original farm, Finca San Jose. After the farm was lost during the Nicaraguan revolution in 1979, these seeds were carefully preserved and later replanted, keeping the family’s connection to Maragogipe alive.
The Maragogipe variety is challenging to grow, requiring extra care and resources, but its exceptional flavor profile has earned it a special place in the specialty coffee world. Fermented in anaerobic barrels for 84 hours, sun-dried for 24 hours, and finished with careful tunnel drying for up to 28 days, this coffee stands out for its depth and unique flavor profile. The resulting light roast coffee has tropical notes of jackfruit, classic bubblegum sweetness, milk chocolate-coated raisin, bright lemon verbena, and an acidic finish that adds a lively complexity.
